Wedding Menu Tastings are a Must

When our clients come to Cabo San Lucas to plan their wedding we arrange all kinds of appointments for them! From wedding venue site inspections to ceremony location scouting, to event design meetings and wedding menu tastings, to hair and makeup trials, and many others details, if feasible. We know planning a destination wedding requires such jam-packed, in-person coordination and so we strive to make the trip productive for all. It can be overwhelming, but that’s why we work ahead of the planning visit to narrow choices and focus the schedule on the essential elements.

Starting with the Site Inspections

Just this past week we welcomed Jennifer and her mother Charlene to Los Cabos. Elena, Carlos, and our wedding planner, Elsa Dilasser, are working with Jennifer on the bride’s 2019 wedding. The first order of business? Choosing where to host the wedding. After several site inspections to some of Cabo’s most fabulous resorts, Jennifer decided Esperanza, an Auberge Resort, was where her dream wedding would take place!

At the heart of every wedding? Food.

We can’t blame Jennifer for choosing Esperanza, especially after the hotel treated the bride and her mom to an incredible wedding menu tasting!  So much delicious food and beverage was offered to tempt Jennifer and her mom, right down to the pretty pearlized mini wedding cake they served for dessert! It was a two-tier, stacked wedding cake with the first tier a vanilla cake with white chocolate filling, and the second tier a butter almond cake with vanilla buttercream filling. A sweet ending to a productive site inspection!

We can’t keep Esperanza’s fabulous food to ourselves, so here is the menu from the tasting:

  • Hors d’oeuvres: Avocado and Pineapple Relish served in a Phyllo Basket; Seared Shrimp with Mango Salsa; Parmesan-crusted Crab Cakes with Jalapeno Aioli; Beef Empanadas; and Chicken Chimichangas
  • First Courses: Wheat, Cauliflower and Parsley Tabbouleh with Mango and Butter Lettuce Salad; and an Arugula Salad with Melon, Pistachio, and Crispy Serrano Ham
  • Entrees: Brioche-crusted, Seared-aged Ribeye Steak with Caramelized Vegetables and a Cabernet Sauvignon Sauce; Boneless Short Ribs with a Pineapple-Ancho Chili Sauce, Tradition Vegetable Tian and Creamy Polenta; and an Annatto-crusted Grilled Salmon served with Celeriac Puree, Roasted Brussel Sprouts and Glazed Carrots
